ABOU WALID Group was among the first producers of organic olive oils. Certified since 1997, the Group, which has the leadership of the production of organic olive oil in Tunisia, high quality, could thus penetrate new international markets such as American, European, and Australian. In early 2001, he was among the first Tunisian companies that exported for the first time the finest olive oils in bulk to U.S. markets.

Eight years of scientific research was needed to develop products with high nutritional value. Starting from organic products, the group collaborated with the Tunisian universities, technical institutes (covering the exploitation of olive trees) and European laboratories (accredited by the International Olive Oil Council) thus providing constant attention to quality:

- Olives: Green olives and black olives.

- From the olive oil burning for salads.

- From the mild olive oil for hot dishes.

These oils are the basic elements of a healthy diet, recipe perfect combination of flavors and fun health prevention.

Olive oil is a mainstay of the Mediterranean diet, whose benefits have been widely demonstrated: prevention of health, reducing cardiovascular disease, intake of good cholesterol through the essential fatty acids. Whether in the form of black olive, green or processed into oil, olive and fruit are the basis of our civilization.

Once the olives are harvested in the Mediterranean region, from October to March, they are transported to the mill. A mill is usually in private. There, the olives are crushed, including core, up to form a pulp. Then the oil is extracted by centrifugation (or in the traditional way: by pressing) on ​​the clear olive juice. The oil (from different vendors and therefore different varieties of olives) is then transported to a central storage tank and the 'filter cake' residual (called pomace in Italian, cf. Sansa orujo and Spanish) is then stored in a large hopper. As for the sale of oil, the mill serves primarily the locals but most is sold by tanks and ends in major international companies. The latter also operate the filter cake, which can contain up to 8% oil that can be extracted only by mechanical means. Many large corporations are paying the same mills for the "service" recovery of the filter cake. This cake is a welcome and cheap material for the refinery. Thanks to chemical agents, they can easily extract the remaining olive oil until the last drop.
